The Good Carb Co. is a small-batch sourdough microbakery in Prophetstown, Illinois. We specialize in handcrafted sourdough made with real ingredients, long fermentation, and a whole lot of heart.
What started with a few loaves from our home kitchen has quickly grown into a weekly operation serving Prophetstown and surrounding communities, with classic staples and creative specialty loaves rotating each week.
Everything is made from scratch and by hand—from mixing and shaping to baking, slicing, packaging, and delivery.
This early fall, we’re excited to take the next step with the opening of The Bread Shed—our own little neighborhood bread stand right here in Prophetstown. It will give our community an easier way to grab fresh bread locally while allowing us to keep doing what matters most: staying small, staying local, and making really good bread.
We’re incredibly grateful for how quickly this community has embraced us—and we’re just getting started.
